Lemon CurdThe lemon curd is a delicate and velvety lemon cream, typical of English pastry. It is prepared with eggs, sugar, butter and lemon and should be cooked gently. You can serve it as a dessert in cups, garnished with strawberries or a fresh fruit, or spread on bread and accompanied by a cup of tea, according to the English tradition. Or you can use it to stuff Tartlets, a Fruit Tart or a Lemon Cake. I use it to prepare the fresh and delicious Lemon Meringue Tart.How to make Lemon CurdIn a bowl suitable for bain-marie, mix the eggs with sugar, cornstarch and lemon juice.Chop the butter in small cubes and keep it in the refrigerator.Cook the cream in a bain-marie and stir it continuously with a whisk. The cream is ready when is thick.Transfer the warm cream into the blender and add the grated lemon rind at the time.Add a couple of cubes of butter (from the refrigerator) and start to emulsify the cream with the blender. Continue to add the butter cubes gradually, continuing to emulsify.Transfer the cream into a cleaned and disinfected container, then cover with cling film.Let the cream cool quickly, in a bain-marie of water and ice and then keep it in the fridge.Tips and TricksThe quantity of lemon can vary according to your tastes. Use organic lemons.
