Ingredients for 18-20 cm (7-8 inches) round pan
For the crust
plain sweet biscuits 150 g (5 ½ oz)
walnuts 100 g (3 ½ oz)
butter 100 g (3 ½ oz)
For the filling
cream cheese 650 g (1 lb 7 oz)
white sugar 180 g (6 ½ oz)
honey 20 g (¾ oz)
vanilla extract ¼ teaspoon
eggs 100 g ( 2)
egg yolks 20 g ( 1)
all-purpose flour 50 g (1 ¾ oz)
milk 100 g (3 ½ oz)
New York Cheesecake
The New York Cheesecake, or simply Cheesecake is a typical dessert of American pastry. The original recipe of the classic Cheesecake is cooking in the oven. It consists of a crunchy crust of biscuits made into fine crumbs and a creamy filling making with cream cheese, sugar and eggs. It should be cooked in the oven, but, after cooking, it should be left to rest in the refrigerator, to enjoy it cold and traditionally garnished with sour cream and berry fruits sauce.

How to make New York Cheesecake
Preheat oven to 356 degrees F (180 degrees C). Line the base of a 18-20 cm (base measurement) springform pan with non-stick baking paper.
Place the biscuits in the bowl of a food processor and process until finely crushed. Add the walnuts and the butter and process until well combined. Transfer to the lined pan. Use a straight-sided glass to spread and press the biscuit mixture firmly over the base and side of pan, leaving 1 cm at the top of the pan.
Bake 10-15 minutes in the preheated oven.
Meanwhile, beat the cream cheese, sugar, honey and vanilla extract in a large bowl until just combined.
Add the eggs and the egg yolks, 1 at a time, beating well after each addition until combined. Stir in the sour cream until just combined.
In a small bowl put the flour and milk and mix until creamy, then add it to the cream cheese mixture.
Pour the cream cheese mixture into the base.
Place the pan on a baking tray and bake for 45-50 min or until just set in the centre. Turn oven off. Leave the cheesecake in oven, with the door ajar, for 2 hours or until cooled completely.
Place in the fridge for 4 hours to chill.

Up to 3-4 days in a refrigerator.
