Ingredients for 20-22 cm (8-9 inches) round panpie crust 500 g (1 lb 2 oz)apple 1250 g (n°6)lemon juice 25 g (n°1 lemon)butter 20 g (¾ oz)brown sugar 60 g (2 oz)cinnamon power 5 g (½ tablespoon)nutmeg powder 1 g (½ teaspoon)
Apple PieI had some apples to consume, so I thought to prepare the Apple Pie! It was prepared by my twin sister when she visited me, after many years of absence, from America, where she lives now. It was the first time I had tasted it, prepared with the typical recipe: it was a sweet surprise, so delicious! With that crisp and crunchy crust and the creamy fruits inside, with a sweet and spicy flavor. And the smell of cinnamon with apples... ah what memories! So today I prepared it, without my sister because she is still on the other side of the Ocean. How to make Apple PiePreheat oven to 400 degrees F (200 degrees C). Prepare the pie crust dough as indicated in the recipe Pie Crust for Pies and Tarts (Pâte Brisée) (click this text in red to go to the recipe).After the rest take more then a half of pie crust dough and roll it 4-5 mm thin and cut a 30 cm disk.Put it in the 20-22 cm (8-9 inches) greased round pan and not cut off the excess pastry. Rest it in the refrigerator. Roll the second part of pie crust dough 4-5 mm thin and and cut a 20-22 cm disk. Rest it in the refrigerator about twenty minutes.Meanwhile prepare the filling: peel the apples and slice them (I make them thin, about 3 mm) and collect them in a very large container. Sprinkle with lemon juice.Put the brown sugar, the cinnamon and the nutmeg powders in a small bowl and mix them.Add the powder mix and the melted butter to the apples and stir them gently with your hands.Rest for about twenty minutes, then drain the excess liquid released from the apples.Take the cake pan from the refrigerator and fill it with apples forming a hill on the center.Cover the tart with the 20-22 cm disk of pie crust dough, then refold the excess dough over the edge.With the tip of a knife make some small cuts on the dough (they let the steam come out during cooking).Bake 15 minutes int he preheated oven. Then lower the temperature to 180° (375 F) and finish cooking about 40-45 minutes, until the crust is golden.Tips and TricksCrustMore times the base of the pie becoming soaked. Follow these tips to resolve this problem.1. Add 50-60 grams of cornstarch or flour to the mixed powder that goes into the filling. During cooking, the starches will thicken the liquid released by the apples.2. Before putting the filling on the pie, sprinkle the bottom of the pie crust dough with breadcrumbs or crumbled biscuit, these will absorb the liquid released by the apples during cooking.3. Cook the pie as I have indicated, or, for the first 15 minutes in a high oven and then lower the temperature. Also keep the cake on the lowest floor of the oven for the first 40 minutes, then move it to the second or third floor until cooked.FillingFor Apple Pie filling you can use yellow, green or red apples, or a mix of these, according to your tastes. Today I used Golden Delicious apples (the yellow ones) and I added a pear.To prepare the filling, use a very large bowl, the largest you have and, if it doesn't seem big enough, use a baking tray... trust in me... I used a big bowl, but not enough, and I made a disaster!More tipsIf you don't have brown sugar you can use white sugar.If you want to have an even more golden crust, you can brush the dough with egg, milk or milk (or cream) mixed with yolk and then sprinkle the surface with white sugar or brown sugar.With the same procedure and changing the filling you can prepare many types of pie: you can use blueberries, cherries, peaches, apricots, add dried fruit, and so on.If you have some leftover dough you can prepare simple and tasty Cinnamon rolls.The Apple Pie is at the top of its goodness when it is eaten warm.
