Pie Crust for Pies and Tarts (Pâte Brisée) This recipe is a basic preparation of French origin (its name in in French is Pâte brisèe). This is the classic dough to made pie crust for Pis and Tarts. The dough is simply made of flour, butter and water. It is called 'briséè', that is broken, because when mix the flour with the butter get a crumbled dough, like wet sand, then add the water. It has a neutral taste, therefore it can be used for sweet and savory preparations, such as tarts and pies or tartlets. To prepare desserts you can add some sugar to the dough, thus obtaining the 'Pâte sucrèe'. How to make Pie Crust for Pies and Tarts (Pâte Brisée)Sift the flour and make a fountain on your table.Mix butter (cold and chopped) and the salt in the middle of the flour fountain. Gradually add the cold water and mix them. Stop mixing when the ingredients are incorporated. Wrap the dough in parchment paper and rest it in the refrigerator for at least 30 minutes before using it. Tips and TricksUse cold ingredients and tools (you can put the flour in the refrigerator before using it; put ice in the water).The amount of water to add to the dough may vary, add it little by little to adjust the quantity.Do not mix the dough too much and if you can leave small pieces of butter inside you will get an even more friable crust.If you are preparing a dough for sweet preparations you can add sugar (on this recipe I add 30 g). You can flavor this pastry in various ways (citrus fruits zests, spices, herbs).StorageKeep your dough in the fridge and use it within two days.
