shredded coconut 150 g (5 oz)
white sugar 100 g (3½ oz)
honey 20 g (¾ oz)
dark chocolate q.s. (optional)
Coconut macaroons
I prepared the Coconut Cake and I still had shredded coconut left. I also had egg whites left over after I made pastry cream for the Berry Tart, so I thought of making some sweets by combining these two ingredients with sugar and honey... and here you are some delicious sweets ready, also suitable for those who cannot eat gluten or lactose. If you love coconut, like me, you won't be able to resist it, they are so delicious!

How to make Coconut macaroons
Whip the egg whites adding the sugar in 2-3 times until a smooth and compact mixture is obtained. Add the honey at the end.
Add the shredded coconut and combine well.
Let it rest in the refrigerator for a couple of hours.
Preheat oven to 325 degrees F (160 degrees C) and prepare a baking tray with baking paper.
Shape 18 balls (about 20 g of weight) and arrange them in the baking tray.
Bake 18 to 20 minutes in the preheated oven, until the cookies are light golden brown.
Cool in the pan for 10 minutes, and then remove to a wire rack to cool completely.
If you like, you can dip the cookies: melt the chocolate in a small heatproof bowl. Dip the bottom of a macaroon in the chocolate; scrape off the excess chocolate and place the macaroon on a prepared baking sheet. Repeat with the remaining macaroons. Then drizzle with some additional chocolate.
Refrigerate the macaroons until the chocolate sets, about 15 minutes.

Tips and Tricks
It is important to let the dough rest so the coconut can be hydrated. In this way the sweets will be soft and moist after cooking.

The cookies can be stored in an airtight container at cool room temperature for for 3-4 days.
