carrots 250 g (9 oz) (peeled)
vegetable oil 80 g (3 oz)
orange zest 1g (a pinch)
eggs 150 g (5½ oz) (n°3 medium)
white sugar 200 g (7 oz)
all-purpose flour 200 g (7 oz)
almond flour 80 g (3 oz)
baking powder 10 g (½ oz)
salt 1 g (a pinch)

Carrot Cake
Carrot cake is easy and genuine, and it is prepared with raw carrots. There are many recipes of carrot cakes, this is easily prepared by blending carrots with vegetable oil to obtain a puree to add to the other ingredients. I also added almonds and orange, which are an excellent match with carrots, to obtain an even more irresistible aroma. This cake do not contain milk or derivatives, so it result lactose-free. I have prepared it in a large hemisphere cake pan, but you can use smaller molds to prepare an excellent and healthy snacks for your children.

How to make the Carrot Cake
Preheat oven to 350 degrees F (175 degrees C).
Grease with oil a 20 cm (8 inch) hemisphere cake pan.
Mix and sift the powder: all-purpose flour, almond flour and baking powder.
Chop the carrots into small pieces and blend it with the seed oil, until you get a puree.
Whip the eggs with white sugar about 5-10 minutes until they are light and smooth.
Mix a couple of tablespoons of whisked eggs into carrots puree.
Add the flour and carrot puree into the eggs, alternately and mix gently whit a rubber spatula.
Pour evenly into the prepared pan.
Bake 45 minutes in the preheated oven, until the cake tests done with a toothpick.
Cool in the pan for 10 minutes, and then remove to a wire rack to cool completely.

Tips and Tricks
To make this cake I used an hemisphere cake pan, but if you do not have it, you can use a classic round cake pan (22 cm diameter).
If you want to keep this cake suitable for a lactose-free diet, use oil to grease the cake pan.
I prefer whip the eggs with a planetary and I use this procedure: I put the sugar and the first egg in the planetary and I whip to the maximum speed for 3-5 minutes, then, without ever stopping the planetary, I add the second egg and whip 3-5 minutes, so I add the last egg and whip for another 3-5 minutes.
To get the maximum volume from the eggs use them at room temperature.
