Ingredients fo 25 cm Chiffon Cake pan
egg whites 240 g (8½ oz) (n°8 medium)
white sugar 150 g (5½ oz) (first part)
cream of tartar 8 g (¼ oz)
egg yolks 120 g (4½ oz) (n°6 medium)
white sugar 150 g (5½ oz) (second part)
vegetable oil 120 g (4½ oz)
water 150 g (5½ oz)
all-purpose flour 300 g (10½ oz)
baking powder 16 g (1 tbsp)

Chiffon Cake
Chiffon Cake is an incredibly fluffy American cake. This cake is baked in a special tube pan. This baking tin is made of aluminum, in the shape of a very deep tube pan, with a removable bottom and legs which allow you to overturn the freshly baked cake and release the steam before pulling it out. This baking tin does not need to be greased because the cake will release by itself. Every time I make this cake, during the first twenty minutes of cooking, I remain glued to the oven door to see it grow until it overflows from the pan, and every time I am amazed and fascinated by how much volume it take, and I imagine when, once cooked, I will be able to bite the first slice. The name of this cake recalls the delicacy and softness of chiffon (the fabric), but to me is reminiscent of the little Agnes's unicorn plush toy from "Despicable Me" ... when you taste it, you'll exclaim: "It's so fluffy!!"


How to make the Chiffon Cake
Preheat oven to 325 degrees F (160 degrees C).
Sift the flour and baking powder into a medium bowl.
Mix the first part of sugar with cemor of tartar.
Whip the egg whites and adding the sugar mixed with the cremor of tartar in 2-3 steps until white and smooth.
Combine egg yolks, sugar (second part), water, oil and whisk well to combine.
Add this wet ingredients to dry ingredients and combine well. Do not mix too much.
Add two tablespoon of whipped egg whites to this mixture and combine well.
Add all this mixture to the remainder egg whites and mix gently.
Pour evenly into the Chiffon Cake tube pan.
Bake 80-90 minutes in the preheated oven (on the lower floor), until the cake tests done with a toothpick.
Remove the cakes from the oven and cool the cake upside down. Once cool to the touch, sliding a knife around the edges to release the cakes from the pans.

Tips and Tricks
I do not have the Chiffon cake tube pan.
If you do not have the Chiffon Cake tube pan you can use a calassic tube pan. To keep it suspended once overturned, use a support, such as an cup placed under the middle part of the tube pan.
I can't find cream of tartar.
Cream of tartar is located in cake department of supermarkets or online cake stores. If you cannot find it use a few drops of lemon juice.
The egg white does not whip.
To obtain a perfect meringue, use warm egg-whites at room temperature. All the equipment used to whip the egg whites should be perfectly clean and degreased. Put the whip at medium-high speed and add the sugar in 2-3 portions.
Vegetable oil: which one to use?
You can use any seed oil, like corn, peanut or sunflower.
How can I serve this cake?
This cake is soft and light, with no fats and has a neutral flavor. I love it just as it is, dusted with icing sugar, but you can make it even more delicious by accompanying it with the cream or sauce that you prefer. Try it with vanilla flavored pastry cream made with the leftover yolks, or with Nutella! If you are a fruit lover, like me, you can prepare a strawberry coulis or a sauce made with raspberry jam as it is used in America.

You can use Chiffon Cake as a base for your birthday cakes. Stuff it with the cream that you prefer, butter cream, ganache or other and create fancy decorations with whipped cream or butter cream. Or icing it with sugar paste and astonish your guests with a fancy design.

Storage
It can be stored for up to 2-3 days in an airtight container.
