Zeppole di San Giuseppe (St. Joseph’s Day Traditional Italian Pastries)
Zeppole di San Giuseppe are traditional Italian cream filled pastries which are made for the Feast of St Joseph. They are named Zeppole di San Giuseppe because Giuseppe is Italian for Joseph. Although there will be a Zeppole di San Giuseppe recipe that varies from Italian to Italian, they are mostly all the same. They are made with pasta choux dough and can be fried or baked. Then they are garnished with pastry cream and top with a sour cherry in syrup (sometimes replaced with a tuft of chocolate pastry cream) and sprinkle with icing sugar. I made the baked version, so they remain less fat and more digestible... and now I just have to wish all the Joseph!

How to make Zeppole di San Giuseppe (St. Joseph’s Day Traditional Italian Pastries)
Preheat oven to 425 degrees F (220 degrees C). Prepare a baking pan slightly grased.
Prepare the dough as described in the recipe Choux Pastry.
Prepare the cream as described in the recipe Pastry Cream.
To shape the zeppole, place the dough in a pastry bag with a 1cm star-shaped tip.
Form a 6 cm rings of dough on the baking try. Make two rings one on top of the other.
Bake for about 15 minutes in preheat oven to 425 degrees F (220 degrees C) and for about 10 minute to 400 degrees F (200 degrees C). Turn off oven, and leave for 10 minutes, then place on cooling rack.
When they are cold fill the whole with the pastry cream and sprinkle with the icing sugar. Top with a sour cherry in syrup.

Tips and Tricks
If you want even more delicious pastries you can fill the inside with the pastry cream (cut it in half or make two or three holes in the bottom).

Storage
Empty cream puffs can be stored for up to three days in an airtight container, or freeze for up to 1 month. When you want to use placing them in the oven at 425°F (220°C) for 3-4 minutes, then stuff them to your liking.
