Italian Carnival Fritters: Tortelli from Milan
This Italian Carnival fritters or 'Tortelli', are typical Lombard fritters from Milan. They are prepared in February, during Carnival. They are small balls of choux dough fried and stuffed with pastry cream. These fritters, so soft and creamy, are irresistible! You can filling them with many type of creams: chocolate pastry cream, lemon pastry cream, dilomatic cream or chantilly.

How to make Italian Carnival Fritters: Tortelli from Milan
Prepare the dough as described in the recipe Choux Pastry. The dough should remain soft, so if necessary add a bit of white egg to adjust the consistency.
Prepare the cream as described in the recipe Pastry Cream.
To make the fritters take the dough with a wet spoon an and put it gently into the hot oil (you can help with a second wet spoon).
Fry the fritters for a few minutes, turning them often with a skimmer. Cook them until they are puffy and golden. Put them on paper to remove excess oil.
When they are cold fill them with the pastry cream and sprinkle with the icing sugar.

Tips and Tricks
To fry the fritters in a homogeneous way you can use this trick: prepare some sheets of baking paper cut out a little smaller than the diameter of the fryer (or the frying pan where you will fry). Fill a piping bag, with a round nozzle of 1 cm diameter, with the mixture and shape of the hemispheres of about 10 g on baking paper (as making cream puffs), keeping them 2-3 cm apart from each other. Dip the baking paper with the fritters in hot oil: after a few seconds remove the sheet with a kitchen tongs and finish cooking the fritters, turning them often with a skimmer.

Fry them, fill them and eat them... these fritters are so delicious that they will be finish in a moment!
