lemon juice 50 g (1¾ oz)
lemon zest 10 g (½oz)
Lemon Pastry Cream
The pastry cream can be flavored in many ways. You can use lemon juice and zest to get a delicious lemon pastry cream. You can serve it as a dessert in glasses and cups, if you like, garnished with strawberries or fresh fruit. Or you can use it to like filling for tartlets, tarts or cakes.

How to make Lemon Pastry Cream
Prepare the pastry cream as described in the recipe Pastry Cream, adding lemon zest before cooking.
Pour the lemon juice on the pastry cream.
Stir the mixture vigorously to obtain a smooth and shiny cream.
Chill it quickly in a cold bain-marie (water and ice).
Store the pastry cream in the fridge.

Tricks and Tips
The quantity of lemon can vary according to your tastes.
Use organic lemons.
When you grate the lemon zest do not take the white part because it have a bitter flavor.
