white sugar 150 g (5½ oz)
eggs 100 g (3½ oz) (n°2 medium)
egg yolks 60 g (2 oz) (n°3 medium)
all-purpose flour 100 g (3½ oz)
potato starch 50 g (2 oz)
baking powder 5 g (¼ oz)
butter 150 g (5½ oz)
lemon juice 15 g (1 tablespoon)
limoncello liqueur 10 g (2 teaspoons)
lemon zest 5 g (¼ oz)
Italian Leomon Cake
This cake, so genuine and fluffy, with lemon flavour, is excellent for breakfast or as a snack for adults and children. You can also use it for layered cakes, filled with lemon custard. It is perfect to prepare birthday cakes, decorated with whipped cream, fondant, glazed or decorated as you like.

How to make the Italian Lemon Cake
Preheat oven to 350 degrees F (180 degrees C).
Apply greased parchment paper to a 18-20 cm (7-8 inch) round pan.
Mix and sift the powder: all-purpose flower, potato starch and baking powder.
Whip the eggs with white sugar about 5-6 minutes until they are light and smooth.
Add egg yoks and whip about 5-6 minutes.
Add the powder. Mix gently.
Add limoncello liqueur, lemon juice and lemon zest.
Add melted butter and mix gently.
Pour evenly into the prepared pan.
Bake 25 to 30 minutes in the preheated oven, until the cake tests done with a toothpick.
Cool in the pan for 10 minutes, and then remove to a wire rack to cool completely.

Tricks and Tips
To make this cake even more fluffy you can use a concentrated butter. You can prepare it easily starting from the ordinary butter found at the supermarket: melt the butter with microwave, then put it in the refrigerator. Do not mixing or moving it. The whole fat part will rise to the surface and solidify, while the liquid part of the butter will remain underneath. Remove the liquid and use concentrated butter to prepare the cake.
When you grate the lemon zest do not take the white part because it have a bitter flavor.
