Cinnamon stars Christmas cookies
During the Christmas holidays I like to stay in the warmth of my home and prepare Christmas sweets in the company of my family. The aroma of cinnamon that will spread in your kitchen while preparing these cookies will allow you to immerse yourself in a warm Christmas atmosphere. These cookies with its cinnamon flavor, if accompanied with a hot cup of tea drunk in front of the fireplace, will warm your heart during the preparation of Christmas gifts.

How to make Cinnamon stars
Heat the oven to 160°C (325°F ) and prepare two/tree baking trays with baking paper.
Sift the flour and make a fountain on your table.
Mix the room temperature butter and the icing sugar in the middle of the flour fountain.
Gradually add the eggs and mix them with the butter and sugar.
Add salt, honey, cinnamon powder and orange zest, then mix the flour.
Stop mixing when the ingredients are incorporated.
Wrap the pastry in parchment paper and rest it in the refrigerator for at least 30 minutes before using it.
After the rest roll the dough to the thickness of 4-5 mm and cut the stars with the cookie cutter.
Arrange the stars on the pan and bake 12 to 15 minutes in the preheated oven.
Wait for the biscuits to cool before removing them from the pan.

Tricks and Tips
When you add the flour to the mixture of butter and sugar, knead only the necessary to incorporate it. If you mix too much you will have a hard pastry, which shrinks during cooking.
To obtain the perfect shaped biscuits, rest the shortcrust pastry in the refrigerator for 10-15 minutes, then cut it and put them in the refrigerator for another 10-15 minutes before cooking.
If bubbles form on the surface of the biscuits during cooking, remove the pan from the oven, flatten them with a spoon, then put them back in the oven to finish cooking.

To make these Cinnamon stars I used a 8 cm star-shaped cookie cutter. I also created cookies that can be placed on the teacup: just cut a rectangle of 0.5 cm x 2 cm on a corner of the biscuit. With the scraps of pasta I made small stars, using a smaller star cutter. You can produce many different designs, using cookie cutters or by free hand cutting. Decorate your biscuits with chocolate, royal icing or fondant, and use sugar beads or colorful sprinkles to make it irresistible to children.

Storage
Keep your cookie dough in the fridge and use it within two days. Or wrap it in protective film and store it in the freezer for a maximum of 30 days.
The biscuits are stored in an airtight container kept at room temperature for 15-20 days.
