egg 50 g (2 oz) (n°1 medium)
white sugar 25 g (1 oz)
all-purpose flour 110 g (4 oz)
baking powder 2 g (1/4 teaspoon)
butter 25 g (1 oz)
milk 100 g (3½ oz)
Pancakea are a typical American breakfast dessert. They are soft and spongy, ready to absorb delicious condiments such as the typical maple syrup or the cube of butter that melts on the top of the hot pancakes, just removed from the pan, but also honey, fresh fruit, jam, nutella and tufts of whipped cream. The dough is made with butter, flour, milk, sugar, eggs, baking powder, but there are many variations. I propose my recipe, really easy and fast, slightly different from the classic one, it is the result of some of my pastry experiments ... you will get some pancakes so soft that you will not be able to resist!

How to make Pancakes
Whip eggs and white sugar until they are smooth.
Sift the all-purpose flour and baking powder for 2-3 times.
Melt the butter and add it to the flour.
Add milk and whipped eggs.
Add egg yolks one by one and while mixing.
Bake the pancakes in a preheat pan for 30-40 seconds per side.
Serve well warm pancakes, with maple syrup, honey or other seasoning.

Tips and Tricks
To get very fluffy pancakes you have to get a fairly thick batter.
To avoid becoming gummy and hard mix very little, just the necessary to mix the ingredients, do not worry if they remain lumps.
Serve the pancakes immediately, hot and sprinkled with maple syrup, honey or other delicious condiments.

Eat them immediately: pancakes are good when are warm! They are so quick to prepare that you have to cook and eat them.
