icing sugar 125 g (4½ oz)
eggs 150 g (5½ oz) (n°3 medium)
white sugar 30 g (1 oz)
all-purpose flour 70 g (2½ oz)
potato starch 60 g (2 oz)
baking powder 5 g (¼ oz)
salt 2 g (1/4 teaspoon)
vanilla seeds (1/4 pod)
Italian Paradise Cake
Paradise cake is one of the most traditional Italian desserts. The preparation is similar of the sponge cake. It differs just for the addition of whipped butter and baking powder. The result is a heavenly, soft and delicious cake. It is loved by kids and adults. This vanilla cake is delicious as it is, but, you can use it as a base for birthday cakes, decorated with whipped cream or fondant, frosted and stuffed as you like. You just have to use your imagination!

How to make the Italian Paradise Cake
Preheat oven to 350 degrees F (180 degrees C).
Apply greased parchment paper to a 18-20 cm (7-8 inch) round pan.
Mix and sift the powder: all-purpose flower, potato starch and baking powder.
Whip butter and icing sugar with vanilla and salt until they are smooth.
Whip the eggs with white sugar about 5-10 minutes until they are light and smooth.
Add whipped eggs and mixed powder into whipped butter alternately. Mix gently.
Pour evenly into the prepared pan.
Bake 30 to 40 minutes in the preheated oven, until the cake tests done with a toothpick.
Cool in the pan for 10 minutes, and then remove to a wire rack to cool completely.

Tips and Tricks
To make this cake even more fluffy you can use a concentrated butter. You can prepare it easily starting from the ordinary butter found at the supermarket: melt the butter with microwave, then put it in the refrigerator. Do not mixing or moving it. The whole fat part will rise to the surface and solidify, while the liquid part of the butter will remain underneath. Remove the liquid and use concentrated butter to prepare the cake.
