Chantilly Cream or Whipped cream
The real Chantilly Cream, of French origin, is a slightly sugared and flavored cream with a bit of vanilla flavor. In Italy, pastry chefs call Chantilly Cream a cream made with Pastry Cream and wipped cream, but this cream is the Diplomatic Cream or Chantilly Italian Cream. Whipped cream is a basic preparation used to create other creams, bavarians, mousse or semifreddo, and is very useful in making and decorating a large number of pastry products from mignon pastries, such as the wonderful cream puffs or stunning and elegant special occasion. With whipped cream, pastry bag and nozzles of various shapes and sizes, you can create an endless variety of decorations on a variety of cakes.

How to make Chantilly Cream or Whipped cream
Pour cream and sugar into a large container and whip it.
You can whip the cream with a whisk, with electric whips or with a stand mixer.
You can get different consistences depending on type of use.
Stop whipping when the cream begins to "write", ie leaves marks in cream still smooth and creamy to get a semi-mounted cream to use for pastry creams, bavarians, mousse or semifreddo.
Whip it until it has reached a firm and compact consistency if you need cream to decorate your cakes.

Tips and Tricks
Use fresh cream.
Whip it when is very cold, get it out of the refrigerator only when you have to use it.
The tools must also be cold, from the container to the whisks. Put them in the freezer for a few before using them.
Do not overwhip the cream or you will end up with butter!

Prepare the whipped cream immediately before use.
You can keep it in the fridge only for a short while because it tends to disassemble.
