Classic Pie Pastry
I love pie pastry! It is an Italian baker’s basic recipe most used and versatile.
The pie pastry is a mixture made with flour, fats, sugar and eggs. There are many variants of this recipe. They are different for the proportions of the ingredients and the method of processing (tradicional, sablée and whipped). I propose for you, the traditional hand-made method of processing, as my mom and grandmother did. I love the contact with the ingredients, mixing it by hand brings me back to my childhood. With this classic recipe you can make a lot of confectionery: jam or marmalade tart , fresh fruit tart or chocolate torte, tea biscuits , decorated cookies (with chocolate, royal icing or fondant) for Christmas Christmas or special occasions like Halloween, Birthday or Christening.

How to make Classic Pie Pastry
Sift the flour and make a fountain on your table.
Mix the room temperature butter and the sugar in the middle of the flour fountain.
Gradually add the eggs and mix them in with the butter and sugar.
Add salt and flavor (vanilla extract, almond extract, coconut, etc.) and mix the flour.
Stop mixing when the ingredients are incorporated.
Wrap the pastry in parchment paper and rest it in the refrigerator for at least 30 minutes before using it.

Tips and Tricks
* You can flavor this pastry in various ways. Try to use peel of a citrus fruit like lemon, orange or lime for make a fresh fruit syrup. You can use vanilla seeds or tonka bean to flavor a pastry used for a chocolate tart. Or try spices: cinnamon, ginger, cloves, to make Christmas biscuits with an unforgettable flavor.

You can use this pastry for a lot of recipes. If you made some biscuits you can produce many different designs, using cookie cutters or by free hand sculpting/cutting. Decorate your biscuits with chocolate, royal icing or fondant, and use sugar beads or colorful sprinkles to make it irresistible to children.

Keep your pie pastry in the fridge and use it within two days. Or wrap it in protective film and store it in the freezer for a maximum of 30 days.
